Sourdough Cheese Crackers
A crunchy, flavorful cracker made with real cheddar cheese and sourdough discard. I like to use all kinds of cheese like Gruyère, Comté or English Cheddar.

| Sourdough Starter (Active or Discard) | 230g (1 cup) |
| All-purpose Flour | 120g (1 cup) |
| Cheddar Cheese (Shredded) | 225g (8 oz) |
| Melted Butter or Oil | 3 tbsp |
| Salt | ½ tsp |
| Paprika | ½ tsp |
| Garlic Powder | ½ tsp |
| Cayenne Pepper | ¼ tsp |
Instructions
- Mix: Combine all ingredients in a bowl and mix well until a shaggy dough forms.
- Knead: Transfer to a work surface and knead for a few minutes until you have a cohesive dough ball.
- Roll: Divide the dough into two equal pieces. Roll each piece between two sheets of parchment paper to a thickness of about 1.5mm (1/16 inch).
- Shape: Remove the top parchment and cut into squares using a pizza cutter. Prick each cracker with a fork and sprinkle with extra salt if desired.
- Bake: Preheat your oven to 175°C (350°F). Bake for 30–40 minutes until the crackers are crispy and lightly golden.
