Sourdough Cheese Crackers

A crunchy, flavorful cracker made with real cheddar cheese and sourdough discard. I like to use all kinds of cheese like Gruyère, Comté or English Cheddar.

IngredientAmount
Sourdough Starter (Active or Discard)230g (1 cup)
All-purpose Flour120g (1 cup)
Cheddar Cheese (Shredded)225g (8 oz)
Melted Butter or Oil3 tbsp
Salt½ tsp
Paprika½ tsp
Garlic Powder½ tsp
Cayenne Pepper¼ tsp

Instructions

  1. Mix: Combine all ingredients in a bowl and mix well until a shaggy dough forms.
  2. Knead: Transfer to a work surface and knead for a few minutes until you have a cohesive dough ball.
  3. Roll: Divide the dough into two equal pieces. Roll each piece between two sheets of parchment paper to a thickness of about 1.5mm (1/16 inch).
  4. Shape: Remove the top parchment and cut into squares using a pizza cutter. Prick each cracker with a fork and sprinkle with extra salt if desired.
  5. Bake: Preheat your oven to 175°C (350°F). Bake for 30–40 minutes until the crackers are crispy and lightly golden.
Roll and cut the dough
Cut in squares and pierce them in the middle. Docking prevents steam from building up as the cracker bakes. Sometimes I add some salt flakes before baking the crackers.
